An eight-inch chef knife from a company that spent forty years making folding knives — and this is the version that looks the part in a camp kitchen rather than a domestic one.
The blade is CPM-154 stainless with SelectEdge, Benchmade's 14-degree-per-side grind against the 20 degrees most kitchen knives ship at. On an 8" blade the difference shows on the first onion — it drops through rather than wedging apart.
CPM-154 is deliberately not a super steel. Softer means more frequent touch-ups on a steel, and it also means seconds to bring back instead of twenty minutes on diamond stones. For a knife that meets a board every day that is the right trade.
OD Green and black G10 handle — the same material as their tactical folders. It grips when wet, does not stain, and does not care what you spill on it.
OD Green G10 or Maple Valley Richlite?
Identical knives — same blade, same steel, same grind, same $400. The handle is the only difference.
- OD Green G10 — grippier with wet or greasy hands, more forgiving of abuse. The one for a boat, a camp kitchen, or a cook who is hard on gear.
- Maple Valley Richlite — warmer in the hand and better looking on a home counter. Compressed paper and resin, so it still shrugs off water.
