A paring knife is the one you actually reach for most days — coring, peeling, trimming, the small precise work a chef knife is too big for. Benchmade builds theirs the way they build folders: full tang CPM-154 stainless with a SelectEdge grind at 14 degrees per side.
That grind is the reason to own this rather than a $20 paring knife. At 14 degrees the edge parts a tomato skin under its own weight. Most kitchen knives ship at 20 degrees or worse.
Maple Valley Richlite handle with a black G10 bolster. Richlite is paper compressed with resin under heat — it has the warmth and grain of wood but it does not absorb water, will not split, and will not loosen around the tang the way riveted wood scales do after a few years of washing.
4.12" blade, 2.67 ounces, satin pivot rings.
Care: hand wash and dry. CPM-154 is stainless but dishwasher detergent is abrasive and the racks will chip an edge this fine.
