A paring knife is the one you actually reach for most days — coring, peeling, trimming, the small precise jobs a chef knife is too big for. Benchmade's version is built like their folders: full tang, CPM-154 stainless, and a SelectEdge grind at 14 degrees per side.
That grind is the reason to own this rather than a $20 paring knife. At 14 degrees the edge parts a tomato skin under its own weight. Most kitchen knives ship at 20 degrees or worse.
The handle is OD Green and black G10 — the same material as their tactical folders. It grips when wet, does not stain, and will not crack or loosen the way a riveted wood scale eventually does.
4.12" blade, 2.67 ounces, satin pivot rings.
Care: CPM-154 is stainless but not indestructible. Hand wash and dry it. Dishwasher detergent is abrasive and the racks will chip an edge this fine.
